P2, the “second plenitude”, is a later release of a Dom Pérignon vintage after fifteen years or more on its lees. The extra ageing gives greater intensity, depth and toasty complexity while keeping the wine’s freshness.
Dom Pérignon is the prestige Champagne of Moët & Chandon, named after the Benedictine monk Dom Pierre Pérignon, cellar master at the Abbey of Hautvillers in the late seventeenth century. The first vintage, 1921, was released in 1936.
Dom Pérignon is made only as a vintage wine, in years the house judges good enough, from a blend of Chardonnay and Pinot Noir. It is released after long ageing on its lees, and some vintages are released again much later as Plénitude 2 (P2), after even longer ageing.
